These Honey-Tahini Cookies are soft, sweetened with honey, with a chocolate flavor and suitable for VEGANS too! They are made with just five ingredients you most probably have in your kitchen.
This recipe came up, while thinking of making a healthier version of cookies for my kids. I was thinking of an easy recipe of butter cookies, so i replaced sugar with honey, i reduced butter to add tahini and for an extra pleasure i added chocolate drops. This combination made my kids happy and me happier!!!
If you want, you can use any type of honey. I prefer Blossom Honey, because I think it has a lighter flavor than oak tree-, pine tree honey etc.
For this recipe you don't need a mixer and this is a plus reason to be excited.
Ingredients (for 32 Cookies)
300 gr. All-Purpose Flour
150 gr. unsalted Butter (room temperature)
100 gr. Honey Blossom
50 gr. Whole Wheat Tahini
50 gr. Chocolate Drops
Method
In a bowl add the room temperature butter and whisk for approximately 2 minutes.
Add honey, tahini and mix very well until homogenised.
Gradually add flour and mix with your hands until a dough is formed.
Add chocolate drops and lightly knead until they will be mixed in the dough. (Do not over knead)
Cover dough with a plastic wrap and freeze for at least 30 minutes.
Preheat oven to 180 degrees (Fan).
In a clean surface roll out the dough (0,5 cm thickness).
Using a cookie cutter, stamp out each cookie and place on a baking tray with baking sheet.
Bake for 12-15 minutes or until edges will become lightly brown.
Remove cookies from oven and allow to cool on cookie sheet for 5 minutes before transferring to a cooling rack.
Store cooled cookies in an airtight container.
