Garlic Lemon Smashed Potatoes

Smashed potatoes are a super alternative side dish for any main course or even as an appetizer. They are crispy on the outside and fluffy on the inside! They are fast and easy to make, also insanely addicting! A piece of advice: If you decide to offer them in a party, i strongly suggest to make lots, because they will go fast!



You can make smashed potatoes in many versions, with many different herb combinations. This one with garlic and lemon is my favorite one!!!

Optionally you can serve them with a light yoghurt dip!



Ingredients

750 gr. Baby Potatoes

2 lt. Water

Lemon Juice (from 1 lemon)

3 tbsp. Olive Oil

2 cloves Garlic, minced

1 tbsp. Rosemary

Fresh Black Pepper

Red Chilli Powder

Salt

Salt Flakes


Method

  • Preheat oven in 230 degrees.

  • In a pot add water, baby potatoes and boil until cooked.

  • Drain and let them dry.

  • Prepare an oven pan with baking sheet and place the dry baby potatoes.

  • Using a potato masher or a large fork or the bottom of a glass, smash the potatoes (i usually smash them, until they are 1-2 cm thick).



  • Drizzle with olive oil and lemon juice. Add minced garlic.

  • Sprinkle with salt, fresh black pepper, red chilli powder and rosemary.

  • Bake for approximately 20-25 minutes or until golden and crispy.


  • Garnish with salt flakes to get the "pick" of the taste!!!
