Dried Fig Arugula Salad with Walnuts and Goat Cheese is a delicious sweet and savory salad, tossed in a honey balsamic dressing! This arugula salad has all of the salad components you need to make a flavorful and satisfying salad. Arugula, carrots, sweet figs, crunchy nuts, salty cheese, a dynamic vinaigrette! Oh my God!!!
Not only is it a visually beautiful, but it's also a very simple salad to make!
In case you are not a fan of goat cheese, crumbled gorgonzola or feta cheese is also a tasty option. You can enjoy this recipe as a salad or as a side dish with your meat, fish etc.
Ingredients (4-6 Servings)
85 gr. Arugula
2 Carrots, shaved
1/2 cup Dried Figs, sliced
1/2 cup grated Walnuts
70 gr. Goat Cheese, crumbled
3 tbsp. Olive Oil
2 tbsp. Balsamic Fig Glaze
1 tsp. Honey
In a big bowl toss together all salad ingredients and goat cheese, and mix with a spoon.
In a small bowl add all ingredients for vinaigrette and whisk very well.
Drizzle the dressing into the salad bowl, tossing the salad until all leaves are lightly coated.
Add walnuts and goat cheese, and lightly toss to incorporate.
Serve immediately and enjoy!
In case you want your salad to look like the foto, then set aside carrots and add them wrapped into your salad, when you will serve it.
