Cheesy Pepper Cake

Are you looking for a quick & delicious lunch? This moist and soft Cheesy Pepper Cake is the savory, easy to make cake you didn't know you needed. No cooking skills required.



This pepper cake would make a good party appetizer too and you could even make it in mini muffin pans.



If you don't prefer peppers, you can replace them with ingredients you like. You can add olives, feta cheese, bacon etc. and adjust it to your taste.


 

Recipe


Servings: 6-8

Preparation time: 15 minutes

Cooking time: 50 minutes


Ingredients

240 gr. self-rising flour

2 big eggs

300 gr. grated cheese, that melts

100 ml sunflower oil

2-3 pepper (red,green,yellow)

200 gr. yoghurt

pepper


Method

  • Preheat oven to 180 degrees (Fan).

  • In a bowl (or mixer's bowl) add eggs, yoghurt, sunflower oil and whisk very well, until homogenized.

  • Wash and cut peppers first into stripes and then into little cubes.

  • Add peppers in the mixture, grated cheese and pepper.

  • Gradually add self rising flour and stir very well, until combined.

  • Spread a 10x30 cm loaf pan with butter and sprinkle it with flour.

  • Pour mixture in a 30 cm loaf pan.

  • Bake for approximately 50 minutes or until golden brown.

  • When ready, remove from the oven and let cool for approximately 20 minutes.

  • Remove pepper cake from the loaf pan.

  • Cut in slices with a serrated knife and serve.
