Beautiful, delicious, buttery, savory, vegan Galette Tart with Zucchini and a filling of cherry tomatoes, fresh spring onions and vegan Feta cheese/ white cheese. This zucchini galette will blow your mind with its balanced flavors! It has saltiness and a bit of sweetness, everything your palate needs to party!!!
If you need a pizza alternative, this is your recipe!!! No, it doesn't taste like a pizza, but the pleasure is the same or even better!!! This is the perfect meal for gathering with family and friends!! Just bring with you a pizza cutter!
1 1/4 cup all purpose Flour
1/2 cup Sunflower Butter, cubed
4 tbsp. cold Water
1/4 tsp. Salt
2 Zucchinis, sliced (0,5 cm thick)
230 gr. Cherry Tomatoes, cut in half
180 gr. vegan Feta Cheese/ White Cheese, rubbed with hands
2-3 Fresh Spring Onions, cut in slices
2 tbsp. Olive Oil (plus for brushing)
1/2 tsp. Sugar
appoximately 1 tbsp. (or less) Sesame
To make the dough, cut the cold butter into the flour, place in a food processor and beat. You can also use a fork or your hands.
When the butter has formed small crumbs, slowly pour cold water, a spoon at a time, until a shaggy dough is formed, which holds its shape when pressed. The dough should not stick into your hands and should not be too hard or dry (if necessary add more water or more flour).
Form a ball, cover in a plastic wrap and let it rest in the fridge for at least 2 hours (or for a night).
For the Filling
In a saucepan add 2 tbsp. olive oil over high heat. Add fresh spring onions and sauté for a minute.
Add cherry tomatoes, season with salt and pepper and sauté.
Lower heat, add sugar and sauté for approx. 2 minutes.
Remove from heat and let cool.
When the filling is cool enough, rub vegan white cheese/ feta cheese with your hands and stir with a spoon.
Slice zucchinis (approx. 0,5 cm thick) and set aside.
Preheat oven to 200 degrees.
In a clean surface roll out dough into a large square (approx. 0,5 cm thick). Using a knife cut out a large circle (approx. 30 cm in diameter).
Place dough circle in an oven pan with baking paper.
Place filling over the dough circle , but leave 5,5 cm boarder.
Arrange zucchini slices over top of the mixture, overlapping as needed and fold the edges of the dough. Try to make your galette tart look like an even circle.
Drizzle a bit of olive oil on top, season with salt, pepper and sprinkle sesame.
Bake for 40-45 minutes.
Remove from oven, let cool and serve.
