Vegan Cinnamon Pancake Cereals

December calls for cinnamon in your breakfast and definitely for these Vegan Cinnamon Pancake Cereals! It's not only fun to make, but also tastes amazing! If you like cinnamon and pancakes, then you will love these!!!


What is pancake cereal?

Pancake Cereal are mini pancakes, served in a bowl like a cereal. Miniature pancake cereals is an idea of Sydney Melhoff, created in April 2020, posted on Tik Tok and became viral.


What's the difference with normal pancakes?

Actually, there is no difference on how you make mini cupcakes compared to regular-sized pancakes other than reducing the batter quantity in the frying pan. Add miniature pancakes in a bowl with your favorite toppings, add a splash of milk or yoghurt (vegan or not - your choice) and a spoon and enjoy it! Your kids will definitely love them!



This recipe is dairy-free, egg free and 100% vegan. For this pancake recipe you will need the following ingredients:

  • Flour: I use all purpose flour, but feel free to use gluten-free flour.

  • Dairy-free milk: I use oats milk, but any other milk will work too.

  • Sugar: I add only a tablespoon of brown sugar, because I like sweet toppings. Any other sugar or sweetener should work too.

  • Cinnamon: it gives a special winter aroma & taste. If you aren't a fan, you can avoid it.

  • Baking powder: it helps the batter to rise.

  • Pinch of salt: balance the flavors.

  • Coconut oil: gives deeper flavor. Feel free to use another oil. Oil keeps pancakes moist and prevents them from sticking to the pan.

Topping ideas
  • cinnamon powder/ sugar powder/ cocoa powder

  • fresh fruits

  • chocolate chips

  • maple syrup (vegan) or honey (non vegan)

  • nuts

  • butter


How to store miniature pancake cereals

If there are leftovers, you can either store them in the refrigerator for up to 3 days in an airtight container or store them in the freezer for up to 3 months. Make sure your miniature pancakes have cooled before storing, otherwise they will become soggy.


 

Recipe


Servings: 4

Preparation time: 10 mins

Cooking time: 20 mins


Ingredients

2 cups all purpose flour

2 cups non-dairy milk (I used oats milk), lukewarm

1 tbsp. brown sugar

2 tsp. cinnamon

2 tbsp. baking powder

1 pinch of salt

1 tbsp. coconut oil, plus extra for frying


Method

  • In a bowl whisk together solid ingredients. Gradually add liquids and whisk to combine until you have a homogenized mixture.

  • Heat a large non-stick pan or crepes maker over medium heat and grease slightly with coconut oil.

  • Carefully pour the batter into a piping bag (or squeeze bottle). Then pipe small mini pancakes onto it (do not overcrowd the pan). Cook for approximately 30-45 seconds or until the top starts to create bubbles. Then flip each mini pancake and cook the other side until mini pancakes become golden-brown. Repeat the same method with remaining batter. (You will need to refill the piping bag/ squeeze bottle or you can fullfill two of them).

  • Serve with favorite toppings & milk or yoghurt and enjoy!
