Vegan Brownies with White Chocolate Frosting

Vegan Chocolate Brownies with many healthy ingredients and white chocolate frosting on top! They are moist, mega chocolatey, dense, cranchy and everything a chocolate lover could dream of!



Ingredients

For Brownies

200 gr. Dark Chocolate

200 gr. Sunflower Butter (room temperature)

150 gr. Chickpea Flour, sifted

150 gr. Coconut Milk

150 gr. Coconut Sugar

150 gr. Grated Walnuts

50 gr. Semolina

1 tbsp. Vanilla Extract

1 tsp. Baking Powder

1 pinch of Salt


For White Chocolate Frosting

200 gr. White Chocolate, melted

1 cup Powdered Sugar

1 cup Sunflower Butter

1 tsp. Vanilla Extract

1 pinch of Salt


Garnish with:

Chocolate Drops


Method

For Brownies

  • Preheat oven to 170 degrees (Fan).

  • Add chocolate and sunflower butter in a bowl over a bain-marie and let it melt in medium heat, while stirring often. When ready, remove from the heat and set aside, until needed.

  • In another bowl add chickpea flour, baking powder, salt, grated walnuts and mix with a spoon.

  • In a food processor add semolina, coconut sugar, coconut milk, vanilla extract and beat, until mixed very well.

  • Transfer to the bowl with the solid ingredients and mix with a spoon.

  • Add melted chocolate and mix very well until all ingredients homogenized.

  • Transfer the mixture in an oven pan (25x32) with baking paper.

  • Bake for 30-35 minutes or until a toothpick comes clean.

  • Remove from oven and let it cool.


For White Chocolate Frosting

  • Melt white chocolate in a bain-marie and allow it to come in a room temperature.

  • In a mixer's bowl add sunflower butter and beat for 2 minutes or until it is white enough in appearance.

  • Add vanilla extract, salt and beat until homogenised.

  • Gradually add Powdered Sugar and beat.

  • With the mixer going on low, drizzle in the melted white chocolate. Beat for 2-3 minutes until the frosting looks smooth and creamy.

  • Set in the fridge for 30 minutes.


To assemble

  • Frost your brownie.

  • Sprinkle with chocolate drops.

  • Cut in 12 isometric pieces.
