Strawberry Roll Cake

This Strawberry Roll Cake is a recipe, that my mother Sofia used to make. I feel nostalgic about my parents and siblings every time I bake it!

This Roll Cake is very easy to be made. You can have it in just 30 minutes! It is a flexible sponge cake, that is rolled up with a filling. You can fill it with any kind of marmalade (homemade if possible for better taste results), nutella, cream cheese frosting etc. and you can also add fruits or nuts in it.



The key to roll cake success is to roll it up, while it is warm and flexible, so that it holds its shape and does not crack, while unrolling it to be filled.



Ingredients

4 Eggs,in room temperature

1 tbsp. Baking Powder

1 tbsp powdered Vanilla or Vanilla Extract

1 cup granulated Sugar

1 cup all purpose Flour

350-370 gr. Marmalade/ Jam (for the Filling)

Powdered Sugar (optional)



Method

  • Preheat oven to 180 degrees (Fan).

  • Prepare a baking tray with a baking paper and set aside.

  • In a mixer's bowl add eggs, sugar, vanilla powder and beat into medium to high speed for 10-15 minutes or until you have a white and fluffy mixture.

  • Add baking powder and beat until combined.

  • Gradually add all purpose flour and beat until you have a homogenized mixture.

  • Spread batter into the pan with the baking sheet and spread evenly.

  • Bake for 15 minutes!!!

  • Before removing from the oven prepare the following: Take a clean tea towel and wet it really well with cold water. Drain towel and place on a clean surface.

  • Turn cake layer onto tea towel, remove baking sheet slowly and roll up with the towel from the long side. (Do not roll up the cake too tight, but also not too loose.) Let it sit for 30 seconds.




  • Carefully unroll cake layer and spread the inside with desired flavor jam.

  • Roll back up and carefully transfer into desired platter.

  • Let cool enough and dust with powdered sugar.

  • Slice and enjoy!!
