Salmon & Vegetables Traybake with "Ageras" sauce is such a healthy and delicious one pan dinner. A complete flavorful meal and so easy to make! Made in no time and all baked on an oven tray! This is a recipe you will have on repeat.
A few simple ingredients for "Ageras" sauce add a lot of good flavor to this salmon one pan meal. Fresh vegetables don't need much, they taste good as they are with some extra virgin olive oil, salt and pepper.
You can prepare this recipe with other vegetables that you like, just be sure about baking time. Alterantively you can replace asparagus with broccoli or zucchini.

Ingredients
2-4 Salmon Fillets (500 gr.)
250 gr. Asparagus
500 gr. Baby Potatoes, cut into half
500 gr. Cherry Tomatoes
For "Ageras" Sauce
20 ml Ageras extra virgin olive oil
1 clove of Garlic, minced
1 tbsp. Parsley
1 tbsp. Dill
1 Lemon Juice and Zest
Salt
Pepper
Method
Preheat grill to medium-high temperature.
Place salmon (skin side down) and vegetables on a big traybake. Add approximately 30 ml water (so that they won't stick on oven pan, while baking).
In a small bowl add all ingredients for the sauce and mix very well. Brush salmon fillets with the sauce.
Drizzle vegetables with some olive oil.
Grill for 40 minutes or until tender.
Serve immediately and enjoy.
