This no mayo Potato Salad is packed with pickled cucumbers, fresh spring onions and a simple olive oil dressing that is a bit tangy & delicious! This recipe is made with simple ingredients and the result is bold & bright!
Customize it by adding more colorful veggies or herbs like parsley or dill. You can also replace fresh spring onions with one red big onion, finely cut in little cubes.
Preparation time: 10 minutes
Cooking time: 30 minutes
1 kg potatoes
300 gr pickled cucumber, sliced
10 fresh spring onions, finely chopped
1/2 bunch chopped parsley or dill (optional)
juice from 2 lemons
2 tbsp. dijon mustard
30 ml extra virgin olive oil
Wash the potatoes and place them in a big pot full of water (don't peel them).
Place over high heat. and boil for approximately 30 minutes or until soften. Pierce with a fork to make sure they are cooked.
Drain and set aside to let them cool.
In a medium bowl add olive oil, lemon juice, mustard, salt & pepper and whisk.
When the potatoes are cool enough, peel them, cut them in thick slices and place them in a big bowl.
Add finely chopped spring onions and sliced pickled cucumbers.
Add the dressing and mix.
Transfer to a serving bowl and enjoy!
Store in the refrigerator. Keep in mind, that the longer you let the potato salad sit in the refrigerator, the tastier it will be!
