Mixed Berry Green Salad

This summery salad is made with arugula and spinach base, fresh blackberries, blueberries and red berries, cucumber, avocado, pine nuts, feta cheese, mint and a sweet and sour dressing. It's not officially summer, but it's been sunny lately and we enjoy this kind of salads. I love a good salad with plenty of components and this mixed berry green salad is no exception!!



If you haven't tried yet to add fruits into a salad, you don't know what you are missing. I really enjoy green salad with fruits, but when it comes to arugula, I prefer to add mixed berries, because they add a bit of sweetness. They also pair well with cucumbers and avocado. Feta cheese adds saltiness, pine nuts crispiness and mint gives a refreshing touch in it. The dressing is a combination of sweet and sour flavors, that pairs really well with the unique extra virgin olive oil "Ageras".



Ingredients (4 Servings)

3 cups Arugula

2 cups Spinach

1/2 cup Blackberries

1 cup Blueberries

1/4 cup Raspberries

1/2 Avocado, diced

1/2 Cucumber, finely sliced

2 handfull Pine Nuts

10 Mint Leaves

100 gr. Feta Cheese or Vegan White Cheese, crumbled


For Dressing

"Ageras" Olive Oil

Freshly squeezed juice from 1/2 Lemon

1 tbsp. Honey

3/4 tsp. Salt

Pepper




Method

  • Whisk together all ingredients for dressing. Taste and adjust seasoning as desired.

  • Assemble salad ingredients and toss in dressing. Enjoy fresh!!!
