Mediterranean Tuna & Quinoa Salad

This Mediterranean Tuna & Quinoa Salad is made with fresh herbs and vegetables. It is topped with a lemon dressing for a refreshing summertime.A light and healthy meal packed in protein! I love to enjoy it with a glass of white wine.


Because of the amazing flavors and the large serving of protein, this salad can be easily served as a meal by itself.


Quinoa is very beneficial for our health. It is a gluten-free plant food, large amount in protein and fiber. It also contains B vitamins, minerals and all nine essential amino acids. Due to its subtle taste, quinoa will take on whatever flavor it is paired with!


Ingredients

1 cup Quinoa, cooked in vegetable broth

80 gr. Tuna (1 can)

5-6 leaves Lettuce, frisee, cut into pieces

10 cherry tomatoes, cut in half

1/2 red Pepper, cut in cubes

1/2 orange Pepper, cut in cubes

2 tbsp. Olives, sliced

3 tbsp. Parsley, chopped

1 Lemon, juice and zest

2 tbsp. Extra Virgin Olive Olive

1 tsp. Salt

1/3 tsp. freshly ground Black Pepper


Method

  • In a big bowl add cooked quinoa (allow it to cool down fully, before mixing it to the salad), cherry tomatoes, tuna, lettuce, peppers, olives, parsley and mix.

  • Make the dressing by whisking the remaining ingredients, olive oil, lemon juice, salt, pepper in a small bowl.

  • Drizzle dressing over salad and toss.
