Long Green Peppers in Tomato Sauce

This scrumptious recipe of Long Peppers in Tomato Sauce is one of the most popular summer appetizers in Greece. Like fried zucchinis, fried peppers set fire to our pans and spread this escaping aroma that makes you envision Greek Ouzo on the rocks.



 

Recipe


Prep Time: 10 minutes

Cook time: 30 minutes


Ingredients

1 kg long green peppers

1 red pepper, sliced

2 cloves of garlic, sliced

4 big fresh tomatoes, smashed

1 big onion, sliced

2 tbsp. parsley, chopped

60 ml sunflower oil

1 tsp. oregano

salt

pepper


Method

  • Wash green peppers and cut the bottom side crosswise.

  • In a big pan add sunflower oil and heat on high heat.

  • Lower heat to medium and add long green peppers.

  • Cook each side for approximately 3 minutes or until golden brown.

  • When cooked, place them on a deep dish and set aside.

  • In the same pan add onion, red pepper, garlic and sauté for approx. 10 minutes or until soft.

  • Add fresh chopped tomatoes, salt, pepper, oregano and chopped parsley.

  • Cook on low to medium heat for approx. 15-20 minutes or until tomato liquids are evaporated.

  • When ready, pour tomato sauce to the green peppers.

  • Serve and enjoy!!!
