Homemade Marzipan Coconut Snowballs

Making Marzipan is easier than you might think. It takes only 5 minutes to make it. It can also be vegan and gluten free, depends on the ingredients you will use. This homemade Marzipan/ Almond Paste Recipe shows how easy it is to make your own Marzipan and combine it with your favourite ingredients.

Marzipan or Almond Paste is traditionally made with almonds and is an absolute treat. Marzipan can be eaten on its own. It tastes sweet, but not overly sweet, has a distinctive almond aroma and the texture reminds cookie dough. You can also use it in baked pastry or decorating a cake. You can colour it or you can use its own natural colour.

The fact that I love coconut made me do this delicious combination of marzipan and coconut.

Ingredients

For Marzipan/ Almond Paste

200 gr. Almond meal Ground Almonds

200 gr. Powdered sugar/ Icing Sugar

4 tbsp. Sugar Syrup or Water

1 tbsp. Vanilla extract

1/2 tbsp. Almond Liquor or Almond extract

2 tbsp. Water as needed for kneading


To assemble:

Milk from one small coconut or 1/2 cup water

150 gr. Coconut Flakes



Method

  • In a food processor, add almond meal and powdered sugar. Pulse for a minute or two, until smooth. (Adding powdered sugar to the food processor prevents the almonds from releasing oil).

  • Transfer to a bowl, add sugar syrup (or water), vanilla extract, almond liquor (or almond extract) and combine well. Tip: if you want to keep the marzipan longer than a week, use sugar syrup (not water), because sugar works as a preservative.

  • Lightly knead on a work surface until you have a smooth ball. If needed, add one or two tbsp. water or sugar syrup. Tip: over kneading can cause the almonds to give out oil, which can make the marzipan oily.

  • Wrap in plastic wrap and store until ready to use. Tip: marzipan must be wrapped in plastic, otherwise it can dry out easily. When ready to use, knead lightly to make it pliable again.


To assemble:

  • Knead small balls, approx. 25 gr. each.

  • Put the marzipan balls into a bowl with fresh coconut milk or water (one or two at a time). This will help coconut flakes stick easier.

  • Add marzipan balls into a bowl with coconut flakes and mix until covered with the coconut flakes.
