Hazelnut Waffles

What a way to start the day with waffles! The batter is made with a mixture of all purpose flour and ground hazelnuts, giving them an amazing nutty flavor. Prepare the coffee, heat the waffle iron and get ready for an amazing breakfast treat!



For sure waffles aren't just for breakfast. Waffles are a great option to enjoy with your coffee or tea during the day.



Ingredients & substitutions

all purpose flour: for a gluten free option, use oats flour.

hazelnut flour: you can either find hazelnut flour in a store or make your own just by adding some hazelnuts or your food processor. Beat until grounded. Almond flour is a great option too.

vanilla extract: vanilla adds extra aroma. Another aromatic option is orange zest.

baking powder

coconut oil: I prefer coconut oil instead of butter, but feel free to use butter if you like.

honey or maple syrup: 1 or 2 tbsp. sweetener, depends on the sweetness level you want to achieve.

eggs

pinch of salt



Step by step instructions
  • Make waffle batter: In a medium bowl, whisk together all dry ingredients (all purpose flour, hazelnut flour, baking powder, salt). In another bowl whisk eggs, then add all liquids and stir to combine. Add liquids in the bowl with the dry ingredients and mix very well until fully combined.

  • Make waffles: Following the directions of your waffle maker, measure the amount of the batter directed into the waffle iron (my waffle maker uses about 1/2 cup of batter). Close the waffle maker and cook as instructed (My waffle maker needs 3-4 minutes for a waffle. Times vary depending on the waffle maker you own).

  • Serve warm with or without toppings.



Topping Ideas

When it comes to toppings, it all depends on how you are feeling! For a simple snack, just add some buttery spread like peanut- or almond butter or dust some powdered sugar. If you want something sweeter, drizzle some chocolate cream and some nuts or fruits. A great idea is to enjoy them with ice cream, especially during summertime. My favorite way is to top them with Greek yoghurt, berries, honey and hazelnuts.

Servings: 6

Preparation time: 5 mins

Cooking time: 3-4 mins (each)


Ingredients

1 cup all purpose flour

1/2 cup hazelnut flour

1 tsp. vanilla extract

1 tbsp. baking powder

1 tbsp. coconut oil

1-2 tbsp. honey or maple syrup

2 medium eggs

pinch of salt


Method

  • Preheat waffle iron according to the instructions of your waffle iron.

  • In a medium-sized bowl add all dry ingredients and stir to combine.

  • In another bowl add eggs and all liquids and whisk to combine.

  • Pure the liquids into the bowl with the dry ingredients and whisk to form a batter.

  • Brush waffle iron with some coconut oil. Pour 1/2 cup batter into the waffle iron cavity. Cook waffles for approximately 3-4 minutes or until golden brown on each side. (Cooking time varies depending on what kind of waffle maker you own).

  • Transfer to a cooling rack and repeat with remaining batter. (Don't forget to brush the waffle iron every time before adding batter).

  • Enjoy waffles warm with toppings of your choice!
