Grilled Apricot & Candied Walnut Arugula Salad


Grilling fruit is deepening the flavors of your favorite dishes. Apricot is one of my favorite fruit to grill and is the perfect combination for salty feta cheese, peppery arugula and crunchy candied walnuts. Grilling apricots makes them sweeter and delicate and so delicious as a result. Serve this Grilled Apricot & Candied Walnut Arugula Salad with the most simple dressing - extra virgin olive oil and balsamic glaze - and enjoy it to the fullest.



Can I use other fruit?

Yes, you can! If you want to replace apricots, I recommend you to use peach or pineapple.


Walnuts

Candied walnuts ar the perfect addition for this salad. You could also use pecans and caramelise them with the same method.


Feta cheese

As Greek I love feta cheese, that's why I use it often in my recipes. In this recipe you can also use goat cheese or the famous italian one gorgonzola.


 

Recipe


Servings: 2-4

Preparation time: 15 minutes

Cooking time: 10 minutes

Total time: 25 minutes


Ingredients

85 gr. arugula

5 apricots

60 gr. crumbled feta cheese

1 cup walnuts

1/4 cup granulated sugar

1 tbsp. unsalted butter

3 tbsp. extra virgin olive oil

2 tbsp. balsamic glaze


Method

  • In a small pan add walnuts, unsalted butter and granulated sugar. Place on a medium heat and stir often for approximately 5 minutes. When sugar melts stir constantly. When sugar is completely melt and has covered walnuts, remove from heat, place on parchment paper and set aside to cool.

  • Wash apricots, cut in half and remove the pit. Heat grill or grill pan over medium heat. Place apricots on the grill and cook until dark grill marks appear, approximately 2 minutes each side. Remove from heat.

  • In a small bowl add extra virgin olive oil and balsamic glaze and stir very well until combined.

  • Place arugula in a salad bowl or serving dish. Drizzle with the dressing and toss to coat. Top arugula with crumbled feta cheese, walnuts and grilled apricots.

Tip:

I strongly recommend to always use a good quality extra virgin olive oil and balsamic.
