Green Tuna Salad

This easy, quick and healthy Green Tuna Salad is a perfect nutritious and flavorful choice for these hot summer days. Recipe is dairy- and gluten-free. Plus, it's packed with a variety of veggies like cherry tomatoes, lettuce, baby spinach and roasted red peppers. Quick & healthy - my kind of meal!



It's filled with plenty of fresh veggies and a variety of organic products, like the tuna fish, the roasted red pepper and a unique extra virgin olive oil with added oregano oil that makes the dressing special.


Canned Tuna

One of my favourite easy protein sources is canned tuna! It's so convenient to keep in the pantry to throw into meals like this green tuna salad. Tuna is an awesome source of complete protein, omega 3 fatty acids and micronutrients.


Roasted Red Peppers

Red pepper has mildly sweet yet earthy taste. As known it is rich in many vitamins like vitamin A, C & K. The roasted red peppers that I used for this recipe are combined with the balanced flavor of garlic, vinegar and olive oil and that gave my salad a special taste.


Organic Evoo with added oregano oil

This is a unique organic extra virgin olive oil with added oregano oil that gave to my dressing a flavorful palate experience. It is interesting to note that oregano has antibacterial and antioxidant properties.

As an alternative you can use a good quality extra virgin olive oil and add some oregano.



 

Recipe

Servings: 2

Preparation time: 10 minutes


Ingredients

100 gr. lettuce

50 gr. baby spinach

80 gr. canned corn

160 gr. tuna fish

1 roasted pepper, sliced

1 red onion, sliced

10 cherry tomatoes, cut in half


For the dressing

2 tbsp. extra virgin olive oil with added oregano oil

juice from 1 lemon

1 tbsp. mustard

ground black pepper

salt


Method

  • Wash lettuce and baby spinach, slice them using your hands and place them in a bowl.

  • Add corn, roasted red pepper, onion and cherry tomatoes.

  • Drain tuna fish and add it in the bowl.

  • In a small bowl add extra virgin olive oil with added oregano oil, lemon juice, mustard. season with salt and pepper and stir until combined.

  • Pour dressing to the salad, stir gently and enjoy!
