Greek Salad

Who doesn't love a Greek Salad during summertime, made with fresh aromatic veggies and a good quality extra virgin olive oil!! An authentic Greek dish, completely delicious and a fantastic addition to your dinner table



Greek Salad is quick and easy to prepare, full of fresh veggies, tossed in a tangy dressing. A healthy combination of crisp cucumbers, juicy tomatoes and crunchy bell peppers served with kalamata olives and feta cheese. Just make sure to use a good quality extra virgin olive oil to make this salad perfect!


You can pair this delicious salad with any meal! I enjoy it the most with grilled garlic bread!

 

Recipe


Servings: 2-4

Preparation time: 20 minutes


Ingredients

1 cucumber

2 big tomatoes

1 medium onion

1/2 red pepper

150 gr. feta cheese, crumbled

3 tbsp. kalamata olives, sliced

5 tbsp. extra virgin olive oil

lemon zest from 1/2 lemon

1-2 tbsp. vinegar

1/2 tsp.oregano

salt

pepper


Method

  • Cut the tomatoes into wedges or chunks and add them in a big bowl.

  • Thinly slice the red pepper into thin stripes and add them in the bowl.

  • Cut the onion in half, then slice it thinly and add it in the bowl.

  • Thinly slice the cucumber lengthwise and roll each slice. Add rolls in the bowl. Alternatively slice the cucumber into half-moon shape.

  • In a small bowl, add extra virgin olive oil, vinegar, lemon zest, oregano, salt and pepper and mix very well. Toss the salad with the dressing and mix.

  • Add crumbled feta cheese on top and some Kalamata olives.

  • To finish, drizzle with some more extra virgin olive oil, if desired.
