Who doesn't love a Greek Salad during summertime, made with fresh aromatic veggies and a good quality extra virgin olive oil!! An authentic Greek dish, completely delicious and a fantastic addition to your dinner table
Greek Salad is quick and easy to prepare, full of fresh veggies, tossed in a tangy dressing. A healthy combination of crisp cucumbers, juicy tomatoes and crunchy bell peppers served with kalamata olives and feta cheese. Just make sure to use a good quality extra virgin olive oil to make this salad perfect!
You can pair this delicious salad with any meal! I enjoy it the most with grilled garlic bread!
Recipe
Servings: 2-4
Preparation time: 20 minutes
Ingredients
1 cucumber
2 big tomatoes
1 medium onion
1/2 red pepper
150 gr. feta cheese, crumbled
3 tbsp. kalamata olives, sliced
5 tbsp. extra virgin olive oil
lemon zest from 1/2 lemon
1-2 tbsp. vinegar
1/2 tsp.oregano
salt
pepper
Method
Cut the tomatoes into wedges or chunks and add them in a big bowl.
Thinly slice the red pepper into thin stripes and add them in the bowl.
Cut the onion in half, then slice it thinly and add it in the bowl.
Thinly slice the cucumber lengthwise and roll each slice. Add rolls in the bowl. Alternatively slice the cucumber into half-moon shape.
In a small bowl, add extra virgin olive oil, vinegar, lemon zest, oregano, salt and pepper and mix very well. Toss the salad with the dressing and mix.
Add crumbled feta cheese on top and some Kalamata olives.
To finish, drizzle with some more extra virgin olive oil, if desired.
