When France meets Greece, you achieve flavours and beauty in one dish!
Ratatouille is a French stewed vegetable dish, originating in Nice. Greek Ratatouille is actually a greek "mpriam" with a french finesse. It is a simple and healthy dish of layered vegetables cooked with a tomato-garlic sauce, until tender. For extra flavour, I top it with crushed feta cheese and parsley, but if you are or prefer it vegan, you can avoid feta or use instead vegan white cheese. This beautiful and flavourful dish can be served as an elegant main dish or as a side dish with meat.
Ingredients
3 Aubergines
3 Zucchinis
3 Potatoes
1 clove Garlic, minced
2 tbsp. extra virgin Olive Oil
Salt
Pepper
For the Sauce
1 big Onion, minced
400 gr. chopped Tomatoes (fresh or can)
2 cloves Garlic, minced
3 tbsp. chopped Parsley
1 tbsp. chopped Basil
1/2 tsp. Oregano
4 tbsp. extra virgin Olive Oil
200 ml Water
Salt
Pepper
Garniture
100 gr. crushed Feta Cheese
Parsley
Method
Preheat oven to 180 degrees.
In a saucepan cook onion and 2 cloves of minced garlic in 4 tbsp. olive oil over medium heat for 2-3 minutes or until tender.
Add chopped tomatoes, water, parsley, basil,oregano and season with salt and pepper. Shimmer for 15 minutes or until thickened.
Meanwhile, cut vegetables to 2 cm thickness. Place them in a big bowl, add 2 tbsp. olive oil, 1 minced garlic, salt, pepper and mix.
Pour 2/3 of the sauce into a 28 cm baking dish. Arrange sliced vegetables standing up on their sides over the sauce. Pour the rest 1/3 of the sauce over the vegetables.
Bake for 45-50 minutes or until vegetables are tender.
Sprinkle with crushed feta cheese and garnish with some parsley.
Serve and enjoy!!
