Let's get in the mood for Greek Orthodox Easter with these Orange Easter Cookies "Koulourakia"! They taste and smell heavenly! They are suitable for vegans! One more reason to be excited for, no mixer is required!

"Koulourakia" (koo-loo-RAH-kee-ah) are not too sweet. They are crispy on the outside, but tender on the inside. This recipe is made with sunflower oil, but they are not oily. The fresh orange juice and orange zest gives them a fruity taste and a smell, that feels like homey warmth. They are the perfect treat for coffee or tea and you can also enjoy them in your breakfast.

They can be made into different shapes and sizes. Whichever shape you decide to make, start with approximately a heaping tablespoon of dough. My favorite shape is long braided koulourakia. You can also shape an "S", braided wreaths, a circle or any shape you desire.
Ingredients (approx. 75 Cookies of 20 gr.)
2 cups Sunflower Oil
300 ml Fresh Orange Juice
Zest from 1 Orange
1 tsp. Baking Soda
1 1/2 cup Granulated Sugar
15 gr. Baking Powder
2 tsp. Vanilla Powder
1 kg. All Purpose Flour

Method
Preheat oven at 180 degrees (Fan).
In a big bowl add all ingredients except for all purpose flour. Whisk until homogenized.
Gradually add flour and mix, until you have a dough mixture that does't stick to your hands.
Knead cookies (20 gr. each) in desired shape and place them on a baking tray with baking sheet. (You will need 3 baking trays for approximately 75 cookies).
Bake for 12-15 minutes or until lightly golden brown.
Remove baking tray from the oven and let cool. As long as they get cool they become harder. (Storage them in an airtight container for up to two weeks)
