Ginger Beef Vegetables Soup

800gr beef

700gr potatoes cut into cubes

2 chopped onions

2 carrots cut into slices

2 springs of chopped celery

20gr. ginger sliced

1 chopped pepper

1 chopped leek

1 vegetable cube

3 tbsp. olive oil

salt pepper

Method steps

  1. Cut the beef into small pieces.

  2. Boil meat in a pressure cooker for an hour and drain. If you don't have a pressure cooker, then boil meat in a pot for 1,5 hour and then drain.

  3. In a saucepan add olive oil and heat over high heat. Sauté onion, leek and pepper until soft. Add potatoes, carrots and meat and continue sweating for 2-3 minutes.

  4. Add 1,2 liter of water, vegetable cube, celery and ginger and let simmer with the lid closed for 10 minutes.

  5. Open the lid and continue cooking for another 20-30 minutes or until all vegetables are soft.

  6. Remove from heat and let cool for a few minutes

  7. Serve soup with fresh lemon juice and freshly ground pepper.
