Homemade Soft Pretzels

Homemade Pretzels are the perfect snack or breakfast! This recipe is very easy to make and requires only a few and the simplest ingredients and no specialized equipment. So, instead of consuming store-bought pretzels, next time, make your own!



How to make homemade soft pretzels

First of all you will need the most simple ingredients. Warm water, warm milk (not hot, but in a higher temperature than lukewarm) dry yeast, melted butter, brown or granulated sugar, salt and flour. Let the yeast foam in the warm milk with a teaspoon of sugar for a few minutes and then gradually add the rest of the ingredients, while mixing. You can either use a stand's mixer fitted with a dough hook attachment, a hand mixer or no mixer at all. You can make the dough also by using your hands.

When you achieve an elastic dough, that doesn't stick on your hands, let it rest for 30 minutes or until double in size. Then prepare a medium saucepan with water and baking soda and start shaping pretzels. Cut the dough into 15 or 20 equal pieces and roll each piece into a long rope. Twist the ends and bring the ends down. That's a pretzel! Feel free to make them in desired shape (buns, long ropes etc.). When the water comes to a boil drop pretzels into boiling water and baking soda. Let them boil for 30-40 seconds each and place them onto a baking sheet. Score pretzels with a sharp knife, sprinkle them with salt flakes, sesame seeds or with sugar and cinnamon and let them rest for some minutes. Then bake them in a preheated oven, set to fan for 15 minutes or until golden brown. Let them cool for 5 minutes and then place them on a cooling rack to cool more.

Enjoy them plain, with butter or with desired sauce!



How to store homemade pretzels

Let them cool completely and then wrap them individually in plastic wrap. Store them at room temperature for up to 2 days, or freeze them for up to 1 month. For a warm, soft pretzel, reheat them in a preheated oven for approximately 5 minutes or just let them defrost naturally overnight.

Servings: 15-20 pieces

Preparation time: 60 mins (10 mins hands on)

Cooking time: 15 mins


Ingredients

8 gr. dry yeast

1 teaspoon granulated sugar

270 ml warm milk (NOT hot)

270 ml warm water

1 teaspoon salt

80 gr. butter (melted)

1 kg. all purpose flour


To assemble

1,5 lt. water

3 tbsp. baking soda

salt flakes or sesame seeds

sugar and cinnamon (for a sweet version)


Method

  • In a big bowl or in a mixer's bowl add dry yeast, sugar and milk, whisk and allow 10 minutes for the yeast to be activated.

  • Then add water, salt, butter and whisk.

  • Gradually add flour, while mixing and knead (either with the mixer or by hands) until there is an elastic dough.

  • Transfer into a bowl, cover with plastic wrap and let the dough rest for about 30 minutes or until doubled.

  • In the meantime preheat oven to 200 degrees, set to Fan.

  • Grease your hands with a bit of olive oil, so that the dough won't stick to your hands and cut the dough into 15 to 20 pieces (depends on how thick you want them to be).

  • Roll out each one into a roped-shaped piece and form the pretzels or just make them into desired shape.

  • Fill a medium-sized saucepan with water, add baking soda and once it is boiled, add each pretzel with a slotted spoon and let boil for 30-40 seconds.

  • Place in an oven pan with baking paper, score them with a knife, add salt flakes and let them rest for 20 minutes.

  • Bake for 15-20 minutes or until golden brown.

  • Remove from the oven, let them cool for 5 minutes. Transfer in a cooling rack and let them cool completely.
