Cucumber & Radish Salad with Olive Oil and Balsamic Mascarpone

A super flavorful salad made with mascarpone cheese as base, topped with sliced cucumber and radishes, drizzled with a delicious vinaigrette dressing. You can enjoy this refreshing cold salad during summer time, near any meal.
The way this salad is assembled makes you enjoy every single bite!
For this salad I used "Ageras" extra virgin olive oil. I always want to use a good quality evoo in my recipes, not only for the best flavor, but also for it's benefits.
Preparation time: 15 minutes

250 gr. mascarpone cheese
1/3 cucumber, sliced
8 radishes, half sliced
2-3 sliced scallions, only the white part
1/2 bunch parsley, only leaves
1 tbsp. pine nuts
4 tbsp. extra virgin olive oil (I used "Ageras" evoo)
2 tbsp. balsamic glaze
lemon zest from 1 lemon
Combine evoo, balsamic olive oil, lemon zest, salt and pepper in a bowl and whisk to combine the dressing.
Spread mascarpone cheese on a plate
Drizzle some of the dressing and save the rest for drizzling over the vegetables.
Top with sliced cucumber, radishes, parsley, scallion and pine nuts.
Drizzle the veggies with the remaining dressing and serve!
