Classic and Beetroot Hummus

Make delicious Classic or Beetroot Hummus using simple ingredients at home. Serve it as a dip, spread it on toast, on tortilla or just enjoy spoonful. These healthy dip recipes are going to be your next favourite thing to eat or to serve in family and friend gatherings.

My first palate experience with hummus was, when I was living in the U.A.E. Since then, I am constantly making and improving my hummus recipes. These are my favourites!!


Ingredients for Classic Hummus

2 cups boiled Chickpeas

2 tbsp. Tahini

1 1/2 tbsp. Lemon Juice

3 cloves Garlic

2 tbsp. extra virgin Olive Oil

6 tbsp. Water (plus extra for cooking)

2 tsp. Salt (plus extra for chickpeas)

Pepper

Red Chilli Powder

Cumin


Garnish with:

Extra Virgin Olive Oil

Chickpeas

Parsley

Red Chilli Powder or Cumin


Ingredients for Beetroot Hummus

1 1/4 cup boiled Chickpeas

1 cup boiled Beetroots, chopped

2 tbsp. Tahini

1 1/2 tbsp. Lemon Juice

3 cloves Garlic

2 tbsp. extra virgin Olive Oil

6 tbsp. Water (plus extra for cooking)

1 tsp. Salt (plus extra for chickpeas)

Pepper

Red Chilli Powder

Cumin


Garnish with:

Pine nuts

Parsley


Method

  • Soak chickpeas in a bowl full of water to cover them and a tbsp. of salt, for at least 6 hours.

  • Drain, discard water and rinse under running water.

  • Place a pot filled with 1 1/2 liters of salted water over high heat. Add chickpeas and bring to a boil. Simmer for 1 hour or until soften.

  • Drain and let cool for 5 minutes.

  • In a food processor processor add all of the ingredients except for chickpeas (and beetroots). Mix until smooth.

  • Add chickpeas (and beetroots). Puree for 5 minutes or until you have a really smooth mixture. (Add more water to make hummus as smooth and creamy as you like).

  • Drizzle with olive oil, garnish with chickpeas, parsley, red chilli powder and serve.
