What could be more comforting than a pasta dish?? The best recipe, when you are craving comfort food!!! This quick and healthy Carrot Pasta Sauce is ready in less than 30 minutes. Give it a try and I am sure, you will love it!!!

Servings: 6
Preparation time: 25 mins
Cooking time: 20 mins
Ingredients (to serve with 500 gr. Pasta)
1 Onion, minced
2 Carrots, minced
1 clove Garlic, minced
2 tbsp. Tomato Paste (or chopped flesh from 2 Tomatoes)
1 tbsp. Parsley, finely chopped
1 tsp. oregano
1 vegetable cube
4 tbsp. Olive Oil
300 ml Water
Salt
Pepper
Method
In the food processor add onion, garlic and carrots and beat until minced.
Place a medium saucepan over high heat and add 2 tbsp. olive oil.
Add minced onion, garlic and carrots and sauté.
Add tomato paste, mix for 30 seconds and add water.
Add vegetable cube, oregano, parsley, salt, pepper and mix.
Lower heat to medium and cook for 20 minutes or until liquids are evaporated.
In the meantime prepare pasta according to package instructions.
Add 2 tbsp. olive oil and mix.
Serve and enjoy!!!
