Caprese Salad with Olives

Caprese Salad is the perfect appetizer or main meal! Cherry tomatoes and mini mozzarella balls are tossed in a balsamic vinaigrette that marries gorgeously with fresh basil, pinenuts and greek black olives.

It is a great side dish, but you can also enjoy it as a light meal with a crusty slice of garlic bread! The secret for this recipe is to add fresh ingredients. This will give a unique taste!

The original italian Caprese salad is made with sliced tomatoes, mozzarella, fresh basil, and extra virgin olive oil. My approach in making this salad includes a "twist" by adding pinenuts, greek black olives and balsamic glaze. It takes only a few minutes to be made! it is super healthy, so tasty and is looking gorgeous! Don't you agree??
Recipe
Servings: 2-4
Preparation time: 5 minutes
Ingredients
400 gr. cherry tomatoes, cut in half
250 gr. mini mozzarella balls
2 cups black olives
2 tbsp. pinenuts
2 tbsp. extra virgin olive oil
2 tbsp. balsamic glaze
Flaky sea salt
Ground black pepper
Basil leaves
Method
- Add cherry tomatoes, mozzarella and black olives to a medium bowl and set aside. 
- In a small bowl or mason jar, mix olive oil, balsamic glaze, salt and ground black pepper. 
- Pour dressing over salad and toss gently. 
- Garnish with basil leaves and enjoy!
