Baby Potatoes Greek Style

As a Greek cook, I often tend to transform my food into Greek and I really enjoy it! Baked baby potatoes Greek style is the perfect bite-side dish for any meal. You can serve within your calorie limit and not feel guilty of indulging in carbs.

Vegetables, feta cheese, olives and oregano make these baby potatoes Greek style. I love every food made in the Greek style, including baby potatoes. I hope you too!


Ingredients

750 gr. Baby Potatoes

1 tbsp. Rosemary

2 cloves Garlic, finely chopped

2 tbsp. Olive Oil

Salt

Pepper

1 Pepper (green, red,orange) cut into strips/ slices

1 large Onion cut into slices

2 chopped Tomatoes

3 tbsp. Olives in slices

180 gr. Feta Cheese

Oregano

Salt

Pepper


Method Steps:

1. Using a knife, carve the potatoes in rows about halfway through the potato.

2. Place them in a fireproof dish and put onion, garlic, rosemary, olive oil, salt and pepper.

3. Add half glass of water and bake in the oven at 200 degrees for 40 minutes.



4. Once the potatoes are cooked, either in the same pan or in a larger one, put pepper, onion, chopped tomatoes and olives in slices, feta cheese (crumbled), salt, pepper and mix.

(optionally you can add a little more olive oil)
